While many talk about living more sustainably, for acclaimed chef Jo Barrett it’s her entire being, and something she has committed to over decades of projects and roles in the food industry. Jo believes that by using the combined skills of chefs and growers to create menus that are collaborative, true sustainability and positive change to the way we consume is possible.
When Dave reached out to discuss how they could create a uniquely Australian version of the traditional Christmas Paneforte, Jo knew instantly it would need to start with local macadamias and honey. Working with these star ingredients, the two chefs worked collaboratively on a recipe that captures the Australian Christmas in flavours - macadamia, honey, lemon myrtle, figs - and marries it with the traditional dessert's cacao and chocolate base. For Jo, Christmas is a reminder of the importance of connecting and celebrating with loved ones - which is made all the better over something sweet.
